Technique
Viticulture
Surface area: 15.11 ha. Average age of vines: 33 years. Planting density: 7,200 vines per hectare. Clay-limestone terroir on the western plateau of Saint-Emilion, in the former parish of Saint-Martin de Mazerat. Double Guyot pruning. Two disbudding operations, three lifting operations. Leaf thinning on the rising side, tillage under the rows. Hand-picked and sorted.
Oenology
Selection of parcels. Destemming, manual sorting, temperature-controlled vatting. Alcoholic fermentation in 70hl truncated-cone vats. Vatting time averages 28 days. Gentle, slow extraction. Maceration in the absence of air, with immersion of the cap and marc. Aged for 16 months, 65% in new barrels, the remainder in vats, amphorae and 20hl tuns.
