Technique

Viticulture

Considered one of Austria’s oldest wineries, located in former monastery buildings in the Wachau region, Nikolaihof has maintained an unbroken winemaking tradition for centuries. It was one of the first biodynamic producers in Europe. The vineyards are tended like living gardens. For this cuvée, the vines are planted in loess on the highest terraces and in deep topsoil resting on bedrock lower down the slope.

Oenology

The wines undergo slow fermentation and extended aging, often exceeding modern standards, to faithfully reflect the terroir and grape variety. The wine ages on its lees in used barrels.
