Viticulture

Le Grand Clos is a family estate of 7 ha located in the commune of Satigny. The vineyard on the hillside is grassed over and maintained with the utmost rigour. A lot of work is done in the vineyard, which produces little but gives healthy and concentrated fruit. The grapes are harvested when they are fully ripe in terms of alcohol, phenolics and aroma.

Oenology

Blend of white and pink Savagnin grapes during the skin maceration. Dry wine aged in stainless steel tanks. No malolactic fermentation.

Saladine with smoked salmon - Arctic char in foil - Poultry mousse.
