Viticulture
Le Grand Clos is a family estate of 7 ha located in the commune of Satigny. The vineyard on the hillside is grassed over and maintained with the utmost rigour. A lot of work is done in the vineyard, which produces little but gives healthy and concentrated fruit. The grapes are harvested when they are fully ripe in terms of alcohol, phenolics and aroma.
Oenology
Very slightly sweet wine with 6 gr/l of natural residual sugar retained during alcoholic fermentation, aged in stainless steel tanks, without malolactic fermentation, grape varieties vinified separately and blended at the time of the creation of the Empreinte.

Foie gras - Fusion or Asian cuisine - Cheese platter (goat or blue).
