Production area: Val di Mezzane. Vines: Pra Alto, Retratto, Campi Magri and Monte Tombole, planted in 1999 and 2004. Altitude: 200-350 m. Exposure: south, south-west. Guyot cultivation. Certified organic and biodynamic cultivation.
Fermentation via indigenous yeasts, Ripasso method with enrichment of the base wine on pressed Amarone grapes for about 6 days. Maceration for 10 to 15 days. Aged in 15 hl cherry tuns for 2 years.
Suggestions for accompaniment
Roast duckling with figs and chestnuts - Roast Bresse chicken - Rack of veal with chanterelles.
