Production area: Val di Mezzane. Vines: Tamasotti, Bianchini, Rossetti and Cavallero, planted in 2004 and 2005. Altitude: 350 m. Exposure: south-east. Guyot cultivation. Slope: 8%. Certified organic and biodynamic cultivation. Ca'Fiui is the name of the hill on which the estate rests.
Fermentation in 40 hl truncated wooden vats using indigenous yeasts. Maceration for 10 to 15 days. Aged in the same containers for 6 to 10 months.
