And we are particularly happy to share with you the pleasure of these ripe and pure Cabernets, rich in fruit, with a delightful immediacy! Such as this cuvée produced from a thirty year old vine on gravel, with a lovely nose of pepper and chilli, and a slender and refined body.

Viticulture

The Boisard brothers are the great hopes of the village of St-Nicolas de Bourgueil. Their vineyard is cultivated in accordance with the precepts of organic farming. For this cuvée, the vines are 35 years old and the yield is 45 hl/ha.

Oenology

No chaptalization, no yeasting. After de-stemming, the grapes are macerated whole in vats for 20 days. 10 months maturation in 50 hectolitre oak truncated cone vats.

Suggestions for accompaniment

Jelly of chuck confit and its cooking vegetables - Duck breast with cherries.
