The Boisard brothers are the great hopes of the village of St-Nicolas de Bourgueil. Their vineyard is cultivated in accordance with the precepts of organic farming. For this cuvée, the vines are 35 years old and the yield is 45 hl/ha.
No chaptalization, no yeasting. After de-stemming, the grapes are macerated whole in vats for 20 days. 10 months maturation in 50 hectolitre oak truncated cone vats.
