Pneumatic pressing, maturing in oak barrels of 1 and 2 wines of the Cuvée Insolite. After blending the different barrels, the cuvée is bottled for the second fermentation following the traditional method. Stirring. Disgorging with ice. Total process: approximately 12 months.
Suggestions for accompaniment
As an aperitif with a few gourmet "tartines" or with starters, fish ceviche, salmon tartar, grilled prawns.
