Viticulture
Thierry is the third of a generation of winegrowers. The estate consists of 12 hectares of vines planted on large terraces of brown schist in a cirque of small mountains covered with holm oaks, arbutus, heather, rockrose and rosemary, thyme. The estate is organically cultivated and uses ploughing and hoeing. Manual harvesting by a small team of 7 people. This wine expresses the schist terroir of Roquebrun.
Oenology
Maceration lasts 15 days, with the grapes destemmed and already blended, the yeasts are indigenous. The wine is aged for 12 months in 8,000 litre tuns. Light sulphiting at bottling.
Suggestions for accompaniment
Beef shank, garlic and potatoes from the Landes - Daube niçoise.
