Technique
Viticulture
Planting density: 10,000 vines/ha. Plot facing south/south-east (1.7 ha). The average age of the vineyard is 40 years. Sustainable cultivation. The soils are weeded mechanically and the fertiliser is mainly composed of composted bovine manure from organic farming. Yields are controlled by early disbudding and green harvesting at the end of July. High trimming and manual leaf removal are carried out on the rising side at the end of June.
Oenology
The grapes are harvested by hand and transported in crates. The vinification remains traditional and is adapted to each vintage. The white wines are partly matured in oak barrels (50%) and they are also renewed every 3 years. Bottling is generally done between the fifteenth and twentieth month following the harvest.

Frogs' legs in pastry with watercress - Grilled pike-perch with lemon butter - Goat cheese.
Liquid geography
Le domaine fut acquis en 1955 par Christophe-Amédée Grandmougin, puis repris par son fils Christophe en 1991. Jadis, il était également une demeure-étape pour les pèlerins se rendant à St-Jacques de Compostelle. La bâtisse abrite des caves romanes du XIIIème siècle et une superbe cuverie du XVIIIème.
A la tête d'un patrimoine de vieilles vignes (moyenne d'âge de 40 ans) cultivées dans le respect de la plante et de l'environnement, il signe des cuvées lumineuses qui n'ont rien à envier aux stars bourguignonnes... et ceci à des prix qui sont restés tout doux.
