Viticulture

This Stellaris Campus cuvée is made from the finest parcel of the Marissou 1er Cru, whose soil is ideal for producing fine Pinots. Marissou, a 1-hectare southeast-facing plot with 50-year-old vines. The soil is dark red, with limestone, gravel, and clay inclusions. Yield: 35 hl/ha, with organic fertilizers.

Oenology

Aged 12 months in oak barrels and 5 months in stainless steel tanks, hand-harvested in small boxes with traditional vinification.

Gratin dauphinois, Rabbit stew with mustard, Veal chop with morel mushrooms

The estate was acquired in 1955 by Christophe-Amédée Grandmougin, then taken over by his son Christophe in 1991. In the past, it was also a stopover for pilgrims on their way to Santiago de Compostela. At the head of a heritage of old vines (average age of 40 years) cultivated with respect for the plant and the environment, he signs luminous vintages which have nothing to envy to the Burgundian stars... and this at prices which have remained very soft.
