Viticulture
GANKO is the name given by Olivier Rivière to his Japanese importers, meaning stubborn or obstinate. This is the name he gave to this cuvée. This wine is made from different parcels of vines aged between 40 and 80 years, planted near the village of Cárdenas in Alto Najerilla (Rioja Alta), at an altitude of around 600 m.
Oenology
The grapes are hand-picked and partially destemmed, and aged for 16 to 18 months in 300- and 600-liter French oak tuns.
Suggestions for accompaniment
Lacquered pork ribs • Beef tartar • Lamb shoulder confit.
