All the vines are cultivated organically and the soil is fully tilled. The harvest is done by hand and in crates. The Pierrefolle parcel is located about 500 m from Clos Varambon, and was planted between 1970 and 1975 at 8800 vines/ha. Fermentation and ageing on the lees are carried out in recent 228 and 400L barrels. The wine is racked before the next harvest and bottled after 18 months of unfiltered ageing.
