Technique
Viticulture
All the vines are cultivated organically and the soil is fully tilled. The harvest is done by hand and in crates. Birbettes comes from the slang word birbe, birbon, birbette = old. The very old vines, planted between 1910 and 1920 (!) with a density of 10,000 vines/ha, are located on the east side of Clos Varambon and behind the house.
Oenology
Fermentation and maturation on the lees take place in 228 and 400 litre barrels, with 15% new wood. The wine is racked and blended in older barrels before the next harvest, and bottled after 22 months of unfiltered ageing.
Suggestions for accompaniment
River fish in foil - Sole with beurre blanc - Pan-fried scallops - Fresh or semi-dried goats from the Mâconnais.
