Viticulture

The majestic cliffs of Solutré and Vergisson, symbols of the vineyards of southern Burgundy, overlook the famous Pouilly-Fuissé terroir. This appellation, dedicated exclusively to the Chardonnay grape, covers four communes: Solutré-Pouilly, Fuissé, Chaintré and Vergisson. It is in the heart of the clay-limestone soil of Vergisson that the Pouilly-Fuissé of the Maison de Montille reveals all its richness.

Oenology

After a light settling process, the estate's musts are transferred to barrels, mainly 600-litre and 228-litre barrels, where the alcoholic and malolactic fermentations take place. No new barrels are used for this wine, preferring barrels of several wines for more subtle ageing. The first racking takes place after around a year's ageing in barrel, followed by 4 to 6 months in stainless steel vats to preserve the wine's freshness and tension. The wine is then gently fined and filtered before bottling.
