Viticulture

Single plot of Salquenen of 2533 m2 planted in 1982.

Oenology

Cold maceration for 8-10 days and vatting for ten days with 25% of stalks. Aged in fine-grained stave casks from the Centre of France, of which 100% are new 600l casks, for 12 months. Bottling after 14 months without fining, with very light filtration and following the lunar calendar in order to respect the organoleptic qualities of the wine.
