Technique
Viticulture
Brown soil formed on Cretaceous limestone scree. Slopes between 10 and 20%. 150 to 200 m altitude. The mourvèdre is located under the cliffs of the Hortus (south-east facing). The Syrah is located under the Pic Saint Loup cliff (north-east facing). The Grenache lies between the two. This wine comes exclusively from the old vines of the Hortus. The climate is cool and wet Mediterranean. Yields vary between 30 and 35 hl/ha.
Oenology
The grapes are crushed and destemmed. Alcoholic fermentation in stainless steel vats (maximum fermentation temperature: 32°C). Vatting for 25 to 30 days. Aged in Bordeaux barrels, 2/3 of which are new. Length: 14 months.

Grilled tuna steak with oriental sauce - Tajine of pork with prunes - Spit-roasted game birds.
