Technique

Viticulture

Brown soil formed on Cretaceous limestone scree. Slope between 10 and 20%. 150 to 200 m altitude. The mourvèdre is located under the cliff of the Hortus (south-east exposure). The Syrah is located under the Pic Saint Loup cliff (north-east exposure). The Grenache is located between the two. This wine comes exclusively from the old vines of the Hortus. The climate is cool and humid Mediterranean. The yields vary between 30 and 35 hl/ha.

Oenology

The grapes are crushed and destemmed. Alcoholic fermentation in stainless steel tanks (maximum fermentation temperature: 32°C). Vatting time of 25 to 30 days. Aged in Bordeaux barrels, 2/3 of which are new. Duration 14 months.

Suggestions for accompaniment

Grilled tuna steak with oriental sauce - Tajine of pork with prunes - Spit-roasted game birds.
