Crystalline nose with floral and fruity notes and a mineral watermark. From the Châtaignier terroir (Fully) and produced for the first time in 2018 from a vineyard cultivated by Valentina Andrei, this cuvée will appeal to lovers of chiselled and dynamic wines. On the palate, the wine is distinguished by its purity of expression and its ascending character which culminates in a long finish with very fine bitters.

Technique

Viticulture

Vineyard planted in 2001 and cultivated according to biodynamic principles. Not mechanizable, difficult access (old-fashioned, 10 minutes on foot). Gneiss terroir, in the Châtaignier area (Fully). Yields limited to pruning and green harvesting.

Oenology

Vinification by J. Perrin and M. Zufferey. Harvested in small crates early in the morning to preserve freshness. Slow pressing. Fractionation of the juice. Native yeast. Long maturation on lees in vats. Bottled in June. Corking with selected top-of-the-range corks: FLEUR Nad de Trescases, 49/25, laser marked.
