Head for the Loire and the Pays Nantais, with one of the region's greatest and most important winemakers of his generation, Jérôme Brétaudeau, a gentle colossus with expert hands. He cultivates his vines biodynamically, with very low yields, and spends a long time ageing his wines in order to refine the superb quality of his wines, which are among the finest in the region. With him, Burgundy melon takes on the crystalline accents of granite rock water, which he knows perfectly well how to capture and enclose in glass. The only drawback is that there's very little volume, so we have to make a quota!
