Viticulture

Grapes from plots 7, 9, 11 and 12 of the Jardín Altamira vineyard, located in Paraje Altamira (Uco Valley), 1,200 metres above sea level. The entire vineyard is certified organic, with sustainable management and special attention to biodiversity.

Oenology

Extraction of a minimum of 1/3 of the volume per day with small pump-overs. Vinified in concrete vats without epoxy, with indigenous yeasts and 15% whole bunches. The temperature throughout the process was 25ºC. Total maceration of 20 days. Aged in concrete for 12 months.

Suggestions for accompaniment

Grilled rib of beef, reduced gravy • Lasagne with grilled vegetables • Rump steak, caramelised shallots.
