The single-vineyard Chardonnay from the Selven vineyard is an absolute rarity. 17 ares of their oldest Chardonnay vines for this cuvée. The soil of the Selven vineyard is characterized by glacial deposits and Üllrüfi sediments with plenty of slate, magnetite and limestone.
Oenology
The grapes are cooled overnight and pressed with the stems in the early morning. The juice of the Selvenen Chardonnay is fermented directly in 225-liter French barriques. After 12 months, the 2-3 barrels are blended in stainless steel for 2 months before the wine is bottled. his results in an annual production of 2 to 3 barriques or 600 to 900 bottles.
