Viticulture
Vines planted in 1987. The Macon Chardonnay comes from a clay-limestone vineyard in the commune of Chardonnay. The vineyard faces south at an altitude of 200 metres. The Clos has a nice light clay structure on a hard limestone subsoil and contains many small white stony screes. The Clos de la Crochette benefits from a very sunny environment. The parcels are worked in organic (ECOCERT certification) and biodynamic culture.
Oenology
Manual harvesting. The Mâcon Chardonnay Clos de la Crochette is vinified for one third in foudre (oval wooden containers of 45 to 48hL) and for two thirds in demi-muids (barrels of 500 to 700L). It is kept on the lees for seven to eight months before racking and preparation for bottling in July or August.
