This Johannisberg is undoubtedly one of the most beautiful and stylish wines of the Valais: for its intrinsic qualities first of all, but also for its real ageing potential. It has a rich and ample nose of candied citrus fruit, almond and roasted pineapple. The palate is fatter than usual, long. More gastronomic than aperitif, it is a real wine for pairing.

Technique

Viticulture

The vines are located in the area known as "Ravanay" (limestone soil on large gravels) and "Grappe dorée", at the bottom of the Chamoson alluvial fan on the Leytron side. Warm and relatively early soils. The vineyard is undergoing organic conversion (biosuisse).

Oenology

The grapes are not crushed and are gently pressed. Settling and slow alcoholic fermentation at a temperature of 20O. Aged on fine lees until the beginning of March. Bottling in April.

Suggestions for accompaniment

Risotto with white asparagus and morels - Cannelloni stuffed with ricotta and borage - Alpine cheese.
