IGT Venezia Giulia, Ribolla Gialla, Gravner - 2002

Fermented in Georgian amphorae buried in the ground, the ancient Ribolla grapes underwent a long maceration with indigenous yeasts. After racking and pressing, the wine was run off into amphorae for at least five months, before beginning a six-year ageing process in tuns. It is bottled without fining or filtration. It is quite simply a mythical wine, for the right winemaker, who has reinvented the orange wine! Jancis Robinson: 17/20
