Fabbrica Pienza was founded in 2013 with the aim of creating wines with a distinctive organic identity. Pienza's climate is very similar to that of the Rhône Valley, warm and temperate. Rainfall is high throughout the year. The hilly terrain is reminiscent of the southern Rhône Valley, while the soils are more similar to the Crozes-Hermitage region. The soils are sandy-clay with a high cation exchange capacity, a good supply of active limestone, a high mineral salt content and numerous Pliocene and Quaternary marine deposits.
Most of the Syrah was fermented with around 20% whole bunches in 100hl unlined concrete NOMBLOT vats. Pumping over followed by punching down. A small batch of Syrah was destemmed and co-fermented in a micro-tank with 10% whole-bunch Viognier. Fermentation was spontaneous. The Syrah in concrete was pressed after about 60 days and aged for about 18 months in a 50HL oak truncated cellar. Syrah/viognier in co-fermentation were pressed after about 30 days and matured in 500L barrels and barriques. Aged for 14 months. The two parts are blended in a truncated-cone vat 2 or 5 months before bottling.
