Trevallon, a mythical wine if ever there was one, needs no introduction! Made from whole grapes, it delivers archetypal aromas of noble vegetation (peppermint), pepper, graphite and red fruit. The palate is both firm and mellow, long and aromatic; the quality and tactile presence of the tannins will, as always, allow it to age like the great red that it is!

Technique

Viticulture

The vineyard is composed of 20 plots of land intertwined with the garrigue and the forest, planted between 1973 and 1978. Various exposures but mostly north-facing. Very stony soils with sand and gravel, with limestone bedrock exposed in places. Altitude between 80 and 280m. The vineyard is ploughed.

Oenology

The harvest is not destemmed. Low yield (25 to 30 hl/ha). No yeasting. No temperature control (it can go up to 36°C). 5-7 days of fermentation and about 15 days of vatting. Aged in 30 hl tuns for 18 months.
