Vines located on the place called "Trémazières", with a very calcareous, gravelly and compact soil. The vineyard is in organic conversion (biosuisse).
The grapes are not crushed and are gently pressed. Settling and slow alcoholic fermentation at a temperature of 20O. Aged on fine lees until the beginning of March. Bottling in April.
