Technique
Viticulture
First vintage: 2015. Production area: Contrada San Lorenzo, canton of Randazzo (Catania). Vineyard extension: 4 ha. Volcanic soil, quite deep and with a small presence of pebbles. Northern slope of Mount Etna, 700-750 metres altitude. Vines between 50 and 100 years old. Goblet cultivation. Harvested in the first decade of October.
Oenology
Alcoholic fermentation at controlled temperature (28-30°C). Spontaneous malolactic fermentation and ageing in French oak barrels. Bottled after 16-18 months of ageing in wood and 1 month in stainless steel tanks.
Suggestions for accompaniment
Duck pie with spices - Guinea fowl with morels - Pheasant with juniper.
Liquid geography
Créée au début des années 2000 par le charismatique Marco De Grazia, la Tenuta delle Terre Nere est située sur les pentes nord de l’Etna, dans la zone la plus réputée. La propriété se compose de 34 hectares repartis en 24 parcelles. Origine volcanique oblige, les sols diffèrent beaucoup d’un cru à l’autre et aussi au sein de chacun d’entre eux, ce qui décuple la complexité des vins autant que leur personnalité.
