Technique

Viticulture

The vineyards are located in the Contrada S. Spirito, in the municipality of Castiglione di Sicilia. The vines are between 40 and 100 years old. Altitude from 700 to 750 m. Cultivation area for white wine: 1.5 ha. Soil of volcanic ash. The vines are on the northern slope of Mount Etna. First vintage of production of this white wine (which also exists in red): 2014.

Oenology

Soft pressing, temperature control. The wine is aged for 10 months in 5 and 10 hl tuns. It is followed by 8 months of bottle ageing.

Suggestions for accompaniment

Cherry tomato, mozzarella di buffala and fresh basil salad - Pan-fried squid in olive oil - Seafood orecchiette.

Created in the early 2000s by the charismatic Marco De Grazia, Tenuta delle Terre Nere is located on the northern slopes of Mount Etna, in the most renowned area. The property consists of 34 hectares divided into 24 plots. Due to the volcanic origin, the soils differ greatly from one vineyard to another and also within each one, which increases the complexity of the wines as much as their personality.
