Oenology
Hand-harvested into 18-kg crates, hand-sorted in the vineyard and at the winery, transferred to vats by gravity, destemmed and crushed. Co-fermentation, 10-day maceration in concrete vats at a controlled temperature, extraction by gentle pumping over, stirring of the lees. Only indigenous yeasts and lactic bacteria.
