Yield 25 HL/Ha. From the same terroir as the Château Chalon 2004/2006/2007 (family vines).
Oenology
Fermented and aged in a Burgundy room on all its lees for 15 months. Supplemented scrupulously every week, the wine is not racked. The minimum intervention possible for this unfined, unfiltered wine, which is only sulphited at bottling at 10 mg/L.
Suggestions for accompaniment
Gruyère, Etivaz but also a Comté - Back of cod with spices.
