Viticulture
Harvested from old vines on seaside schist, giving a tiny yield of around 15 hl/ha. This is actually Cambrian schist, deposited on a skeletal soil held in place by a system of terraces (fexes). This type of shale is not very common in Europe. They are very old, very acidic and very rich in metals (iron, aluminium), and give the vines wines with great character, freshness and exacerbated tension.
Oenology
The harvest is sorted as soon as it arrives in the cellar. It is then destemmed and sorted a second time on a vibrating table. Fermentation via indigenous yeasts, vinification with pre-fermentation maceration and maturation in vats.
Suggestions for accompaniment
Lamb fillet in a herb crust - Hare stew - Wild boar entrecote.
