This cuvée is harvested from parcels that ripen early in order to maintain the best balance between finesse and volume. Grenache gris had practically disappeared from Banyuls because it had the reputation of rotting more quickly than the white. It was the Parcé brothers who rehabilitated it, thanks in particular to this cuvée, the first vintage of which was produced in 1993.
Oenology
Partially fermented in barrels in 3 year old wood. Aged on lees until April.
Suggestions for accompaniment
Rock fish soup - Artichoke, fennel and grilled red mullet salad - Cream of chickpea soup with prawns.
