Viticulture
This cuvée is harvested from parcels that ripen early in order to maintain the best balance between finesse and volume. Grenache gris had practically disappeared from Banyuls because it had the reputation of rotting more quickly than the white. It was the Parcé brothers who rehabilitated it, thanks in particular to this cuvée, the first vintage of which was produced in 1993.
Oenology
Partially fermented in barrels in 3 year old wood. Aged on lees until April.
Suggestions for accompaniment
Rock fish soup - Artichoke, fennel and grilled red mullet salad - Cream of chickpea soup with prawns.
Au-delà d'être l'une des plus anciennes sélections du CAVE, la Rectorie est un mythe. Un mythe du Roussillon. Un mythe du grand vin méridional. Un mythe de Collioure et de Banyuls.
Chaque goutte de vin ici produite vaut son pesant d'or. Pas dans ses proportions hors normes, mais plutôt par la justesse et le profond caractère banyulenc de son esthétique. Les blancs secs sont infiniment marins et salins. Les rosés, vineux et méditerranéens. Les rouges profonds et terriens. Les rancios secs, comme des photographies du paysage, fauve et minéral. Et les banyuls exsudent le schiste, le soleil, la lumière orangée et chaude, si chère aux grands peintres de la côte vermeille.
