Viticulture
The Terres de la Crau Rouge is home to the estate’s oldest vines, located in the famous “La Crau” vineyard within the Châteauneuf-du-Pape appellation. Grenache, Syrah, and Cinsault take root in the rounded pebble, sand, and clay soils of La Crau.
Oenology
Hand-harvested into 20-kg crates, hand-sorted in the vineyard and at the winery, transferred to vats by gravity, fully crushed, and partially destemmed. Maceration for 25 to 35 days in temperature-controlled concrete vats, with extraction achieved through racking and pumping over. Only indigenous yeasts and lactic acid bacteria are used. Aged on lees in large oak casks for 20 months.
