Viticulture
Since Jean de Pontac, the founder of Haut-Brion, donated it to the Carmelite religious order in 1554, this discreet estate, tucked away in an island of greenery, has stood out as one of the few in the Pessac-Léognan appellation to produce only red wines. The terroir is mainly composed of Günz gravel and Aeolian sand on limestone bedrock. The average age of the vines is 35 years. Planting density is 10,000 vines per hectare.
Oenology
Harvesting is entirely manual. The must is macerated and fermented in temperature-controlled stainless steel vats for 15 to 24 days. The size of the vats (from 40 to 80hl) corresponds to the parcel-by-parcel distribution of the vineyard. The wine is then aged in barrels, 50% of which are new, for 18 months.
