From the end of the 17th century, Jean-François de Lascombes had the ambition to produce a very great wine. The present Château was built in 1867 by the Bâtonnier Chaix d'Est Ange. The vineyard extends over 84 hectares and benefits entirely from the Margaux appellation. It is planted on three main types of soil, clay-limestone, clay gravel and gravel. The average age of the vines is 35 years. The vines are pruned, the leaves are thinned out on both sides and the vines are thinned out.
The grapes are sorted by hand, before and after destemming. During the vatting process, the grapes are lightly crushed and cooled. The pre-fermentation phase lasts 8 days. The post-fermentation maceration is done at 30O and the alcoholic fermentation at 28O. Light pumping over is carried out. Malolactic fermentation is carried out in barrels, 80% of which are renewed each year. Lascombes is aged for 18 to 20 months. Fining with egg white before bottling.
