Location 300 m west of the village of Saint-Philippe D'Aiguilhe. 15ha, 50a. Clay-limestone soil. Average age of vines: 40 years. Vine density: 6200 vines/ha. Double Guyot pruning. Leaf thinning on the east side. Manual harvest with 3 stages of grape sorting (2 before destemming, 1 after).
Oenology
70 hl thermo-regulated stainless steel vats, wider than they are tall. Parcel-by-parcel selection, manual punching of the cap. Vatting time averages 40 days. Malolactic fermentation in vats. Blending in January. Ageing 50% new barrels, 10% one-wine barrels, 19% vats, 15% amphorae, 6% foudres.
