Viticulture
Three large parcels located in the commune of Pauillac. To the north, the vines are close to those of Mouton, Lafite and Pontet-Canet. In the centre, they occupy part of the "Grand-Puy" village. To the south, they are located on the Saint-Lambert plateau. The gravelly soils are typical of Pauillac, silicogravelly, where the Cabernet Sauvignon gives its best and the more clayey and sandy gravels are reserved for the cultivation of Merlot. Average age of the vines: 30 years. Management of the soil and the vineyard on a parcel-by-parcel basis. Sustainable viticulture (certified) and respect for environmental balance
Oenology
After manual harvesting and a first sorting in the vineyard, the grapes are taken to the cellar, destemmed and meticulously sorted again. The vinification is carried out in thermo-regulated stainless steel tanks. Part of the batches undergoes malolactic fermentation in new barrels. The wine is aged for 18 to 24 months, depending on the vintage, in oak barrels, 30 to 40% of which are new each year.
