Viticulture

Cos d'Estourne was founded in 1811 by Louis-Gaspard d'Estournel. His wine, with its powerful, smooth flavour, quickly became a favourite at imperial and royal tables. It was exported as far as India. Between Pauillac and St Estèphe, separated by the "jalle" of Breuil, the hill of Cos dominates the Gironde. The terroir is a mound of quaternary gravel. Planting density is high (10,000 vines/ha). Only vines aged between 20 and 70 years make the Grand Vin.

Oenology

Fermented at low temperature (<28OC) then reheated to 35OC to extract the tannins. Aged in new barrels for 18 months.
