Viticulture

Located on the limestone plateau of St-Emilion, the terroir of Cheval-Blanc includes a great heterogeneity of sedimentary contributions, which has given rise to a complex terroir. The subsoil is essentially composed of clay, sometimes gravel. Average age of the vineyard: 35 years.

Oenology

48 to 76 hours of pre-fermentation maceration at 20°C. Alcoholic fermentation for about 6 days. Maceration for about 2 weeks at 30°C. 18 months in barrels (100% new). Fining with egg white.
