Technique
Viticulture
The property was bought by the Thienpont brothers in 1988. The vineyard is around 35 years old. The soils are predominantly clay-limestone, with occasional silt veins on a marl subsoil. The property is run by Stéphane Derenoncourt.
Oenology
Harvested by hand with sorting, whole crop pressing and settling by sedimentation. Fermented in oak barrels, 50% of which are new, and kept on the lees for 8 months with stirring.
