The walled vineyard of 5.83 hectares is one of the few in the region, the oldest and the steepest in the Champagne region. Perfectly south-facing, it occupies the best slope in Mareuil-sur-Ay and is an exceptional terroir, where the chalk outcrops.
Partial vinification (47%) in oak barrels to give greater complexity without premature oxidation. No malolactic fermentation, so that the natural acidity offsets the very powerful terroir. Prolonged ageing for eight years on the lees, at a constant temperature (12°C) in the House's historic cellars in Mareuil-sur-Ay.
