Delphine Boulard is now the sole manager of the estate and produces a range of champagnes with character, faithful to their northern terroirs. The vineyard is biodynamically cultivated and the emphasis is on the taste for tasty, full-bodied, ripe wines made from small yields. Such as this cuvée with its nose of dried fruit and citrus fruits, both full and subtle, fantastically natural!

Oenology

Only the "cuvée" (the first juice from the first press) is used in the composition of this champagne. Vinification in small oak barrels, foudre and demi-muids. Spontaneous alcoholic fermentation - natural indigenous yeasts. Malolactic fermentation carried out. Stirring of the fine lees every 10/12 days. Bottled on Fruit Day (lunar calendar). Not fined.
