Viticulture
Valérie and Benoît Lahaye grow their vines organically. All the soil is worked, partly with horses. Home-made compost. Treatments based on herbal teas, copper, sulphur and essential oils. Origin: 100% Bouzy grand cru for this cuvée. Brown limestone soil. Density of 8400 vines/hectare. Rootstock 41B. Chablis pruning. Vines planted in 1923 and replanted from 1952.
Oenology
Malolactic fermentation carried out. No racking, one stirring of the lees, aged for 10 months. Cellaring in the spring following the harvest. Disgorged in March N+4. No dosage, brut nature.

Puff pastry of turbot with sorrel - Crayfish salad - Large semi-dry goat cheese.
The Lahaye family have been winegrowers since the 1930s in Champagne. The current generation, Benoît, his wife Valérie, and now their children Etienne and Valentin, are still based in the family village of Bouzy. The couple cultivates (certified organic since 2003 and biodynamic since 2010) a little less than 5 hectares of vines, mainly pinot noir, spread over Bouzy, Ambonnay and Tauxières-Mutry. He has also launched new cuvées: Violaine (no sulphur), Le Jardin de la Grosse Pierre (plot selection and ancestral grape varieties) and now even a Blanc de Blancs, in the land of pinot! Today, the company is recognised for the seriousness of its work, the constant quality of its wines and the maintenance of a faultless range, and its recognition extends beyond the borders of France.
