Viticulture
Maison Louise Brison, a family affair for 4 generations, cultivates its vineyards in the Côte des Bar, on Kimmeridgian soils rich in marine fossils. This exceptional terroir, with its ideal exposure, produces a generous, racy Pinot Noir, as well as a Chardonnay with roundness and finesse. Committed to respectful viticulture, the estate began its organic conversion in 2017 and has been certified organic since the 2020 vintage.
Oenology
A Brut Nature champagne (0 g/l dosage) from the 2018 harvest. A balanced blend of 50% Pinot Noir and 50% Chardonnay, it is vinified and aged in oak barrels for 9 months, without malolactic fermentation.
Suggestions for accompaniment
Sea bass tartare with lime zest and olive oil - Cream of Jerusalem artichoke soup with roasted hazelnut slivers - Roast guinea fowl with cockles and white wine jus.
