Technique
Viticulture
Surface area: 2.08 hectares. Soil type: clay-limestone, Kimmeridgian. Location and exposure: Valmur is located in the heart of the Grand Cru area concentrated in the commune of Chablis. The clay-limestone, Kimmeridgian soil is a favourite for Chardonnay. Planting density 6,000 to 8,000 vines per hectare. Age of the vines: 51 years (from 34 to 60 years). Integrated viticulture: mechanical working of the soil, reduction of inputs with the "Changins" method, biodynamic trials.
Oenology
Manual harvesting. Pneumatic pressing of whole grapes. Slow pressing at low pressure. Vinification and maturation take place simultaneously in barrels and small thermo-regulated vats. The malolactic fermentation is carried out at 100%. The maturation is prolonged on fine lees to refine the wines for about 6 months. Vats and barrels are blended and bottled after 18 months of ageing.
