This is one of the two new cuvées of the sparkling Anne-Claire Schott: a combination of pinot noir and pinot gris, two strong characters grown together in the magical environment of Chapf (the name of the plot). Radiant in harmony, light and serene, they open up to each other and unite to follow a common path: that of finesse and fruit, with a very light carbonic content, due to the absence of sulphur. Long live the bride and groom!

Viticulture

Family estate of 3.5 ha, located in Twann. Anne-Claire took over the property in 2016 (3rd generation), after her training as an oenological engineer in Changins. Biodynamic viticulture from the 2018 vintage. Soils worked every other row for 30 years. Manual weeding and weeding with a weeding machine. Hand-worked. Very steep slopes, difficult to mechanise. Approximately 7500 vines/ha.

Oenology

Fermentation in tanks, manual punching down 1 to 3 times a day. Aged 12 months in barrels on fine lees. 20% new wood / French oak / Burgundy barrels. Annual production 2100 bottles.

Suggestions for accompaniment

Roast farmhouse poultry - Baked veal loin - Sweetbreads with tarragon.
