Viticulture
On the magnificent La Ginestra vineyard, located in the municipality of Monforte d'Alba, Domenico Clerico produces two very different wines, the Ciabot Mentin Ginestra and, since 1990, the Pajanà.
Oenology
Vinification in rotating vats for 5 to 10 days. Aged in barrels (90% new) for 18 to 24 months.
